Relle’s Recipes: Refrigerator Dill Pickles

As you know Charlie is crazy for cucurbits. When we have an abundance of cucumbers we make fridge pickles. This is Charlie’s family recipe and my favorite. These will last in the fridge for up to 4 months.

Ingredients (makes 1 quart)

  • Cucumbers sliced (smaller taste better)

  • 2-3 Tbsps salt

  • 2-3 cups vinegar

  • 1 cup water

  • 1 bunch dill

  • 2-3 cloves garlic

  • 3-4 red onion slices

  • Optional: peppercorns, mustard seeds, or white sugar

1) Boil vinegar, salt, and water on the stove. Turn off and let sit for 5 minutes.

2) Cut cucumber into spears or chips depending on preference. 

3) Use sterilized jars with clean canning lids (can be used!)

4) Pack garlic, dill, onion, and optional seasonings into the jar tightly.

5) Pour cooled liquid into the jars to cover cucumbers.

6) Store in fridge, pickle will be ready within 24 hours.
